    La Goma de Tara (E-417) es un hidrocoloide 100% natural obtenido a partir de lassemillas del rbolde la Tara, Caesalpinia Spinosa, de la familia de las Caesalpinaceae leguminosas. Laplanta escultivada comercialmente en el Per para el consumo humano y animal.

    DESCRIPCIN Y PROPIEDADESLa Goma de Tara es de color crema claro y posee la ventaja de ser inodoro, inspida, muyestable y altamente resistente a la descomposicin. La Goma de Tara tiene un especialpolisacrido que convierte la goma en un gel altamente viscosa en bajas concentraciones.Debido a su alto contenido en galactosa, la Goma de Tara, encomparacin con productos similares es fcilmente soluble a bajas temperaturas (25 C).

    La Goma de Tara tiene una gran capacidad de absorcin de agua. En agua fra se dispersa

    lentamente y cuando se calienta se transforma en un gel homogneo que mantiene suspropiedades de estabilidad al enfriar o congelar.

    La Goma de Tara est aprobado por la Unin Europea como aditivo para alimentos con elCdigo E-417 ( Food Aditives approved by the EU). La Unin Europea ha realizado estudiosde la Goma de Tara cuyos resultados se encuentran en los documentos WHO Food Aditivesseries 21:

    Tambin la Goma de Tara fue aprobado como food additive por FOOD STANDARD

    La Goma de Tara es un hidrocoloide igual que las otras gomas comestibles como la GomaArbiga, Goma Xantan, Goma Guar, Goma de Algarrobo y Carragenina, debido a que laGoma de Tara evita las reacciones indeseables de sinresis y otras alteraciones.

    La Goma de Tara es estructuralmente similar a la Goma Guar y al Locust Bean Gums o Gomade Algarrobo (LBG). La galactosa ms alta sustituye a la Goma Guar y la galactosa ms bajasustituye al Locust Bean Gum.

    Las viscosidades de la solucin producidas por la Goma de Tara son altas y de texturaspequeas comparados con las viscosidades de la solucin del LBG.

    La Goma de Tara es un galactmano que ofrece ventajas econmicas y funcionales con unaamplia gama de usos en la industria de Alimentos, Farmacutica y Cosmtica.

    La Goma de Tara proporciona a los procesamientos de alimentos muchas ventajas en una granvariedad de aplicaciones sin grasa y de bajo contenido graso, en aplicaciones para alimentosincluyendo: postres, productos lcteos, salsas, condimentos, alimentos horneados, aderezos,ensaladas. As como la Goma Guar, la Goma de Tara es soluble en fro y alcanza la viscosidadmxima en el agua, leche y otros sistemas de bajo slido en varios minutos.

    Similar al Locust Bean Gum, la Goma de Tara acta sinrgicamente con carragenina-kappa ygoma Xantana para aumentar la fuerza de gelificacin y hacer que el gel ayude a que no sepresente la sinresis.

    USOS Y APLICACIONESLa Goma de Tara debido a su consistencia de naturaleza hidrocoloide se disuelve fcilmente

    en el agua, esta ventaja permite incrementar la viscosidad del gel y la consistencia enproductos alimenticios. La Goma de Tara se usa principalmente para espesar solucionesacuosas y para controlar la movilidad de materiales dispersados o disueltos.La Goma de Tara posee las caractersticas propias de las gomas vegetales, actuando comoespesante, aglomerante, estabilizador, coloide y capa protectora y adems tiene la ventaja deser incolora al disolverse, inodora, inspida, muy estable y altamente resistente a ladescomposicinDebido a las caractersticas arriba mencionadas, la Goma de Tara tiene los siguientes usos yaplicaciones:

    1.- INDUSTRIA DE ALIMENTOSEn helados, yogur, quesos y dems productos lcteos. Tambin se usa en la preparacin desalsas, mayonesa, mostaza, panificacin, pastas (fideos), mermeladas, pasteles, dulces,

    nctares, embutidos y fabricacin de carne enlatada.

    2.- INDUSTRIA FARMACEUTICA Y COSMETICAComo excipientes de cpsulas, pastillas, jarabes, geles capilares, cremas y produccin depastas dentales.

    3.- EN LA INDUSTRIA PAPELERAEn papeles, cartones.
